This gem takes just a few minutes to mix, and even less time to enjoy! Packed with antioxidants and a full serving of veggies, this smoothie will energize your afternoon. Don’t forget the spinach! The flavor will disappear amongst the blueberry while you get a nice dose of iron!

Health benefits of blueberries

Load up on a variety of vitamins, minerals and antioxidants when including blueberries in your diet. Blueberries are know to contain a high concentration of anthocyanins, a beneficial antioxidant.

What’s an antioxidant?

In short, an antioxidant helps to neutralize harmful ‘free radical’ particles that destroy cells. Left unchecked, cells age and decline in health faster, which may lead to disease and speeds the aging process. Special antioxidants found in blueberries may aid in reducing the risk of cancer, cardiovascular disease and help reduce inflammation.

Recipe Modifications

I love this recipe because it doubles as a simple base to make a variety of smoothies by adding or swapping ingredients:

Swap blueberries for other berries: try a mixed berry blend or make use of in-season berries. Strawberries are in season in June, and blueberries peak in July.

Swap in frozen fruit: in winter months, quality and taste of fresh produce declines. Opt for frozen blueberries or berry blends for a more cost-effective drink. Plus, frozen berries create a thicker, richer texture similar to a milkshake!

Add frozen cauliflower: looking to add MORE veggies? Throw in a handful of raw or frozen cauliflower to boost fiber and create a more filling smoothie with very few extra calories.

Include avocado: creamy fats from avocado bring on a silky, decadent texture without much change to the flavor profile. Although this is a higher calorie addition, avocado also adds filling fiber and Omega 3’s! Try adding 1/2 cup, and check out frozen avocado chunks too!

Add ground flaxseed: a tablespoon of ground flaxseed adds a boost of Omega 3 fatty acids and fiber without changing the taste or texture.

Use cow’s milk or soy milk: either option contains more protein than almond milk, and make a great swap for a post-workout protein drink.

Blissful Blueberry Smoothie

Ingredients
  

  • 1 cup fresh blueberries
  • 1/2 cup plain, unsweetened Greek yogurt
  • 3/4 cup unsweetened almond milk
  • 1/2 cup (small handful) fresh spinach
  • 1 tsp vanilla extract

Instructions
 

  • Wash blueberries thoroughly before adding to blender.
  • Scoop in yogurt, almond milk, spinach and vanilla.
  • Blend on high for about a minute, or when everything is well-dispersed.

Notes

Pro tip: Serve with a crazy straw to make it more fun! This is a great way to get kids excited about fruits and veggies.
