This 20-minute weeknight wonder will have a healthy, hearty meal on the table in no time! Packed with protein, iron and potassium, this meal is perfectly replenishing after a long day. Double the recipe for an easy lunch tomorrow.
Serves 4 Prep time: 20 minutes
1 pound 90% lean ground beef/turkey
4 cups raw baby spinach
2 medium zucchini, spiralized or sliced thin
12-oz can diced tomatoes
1 cup garden mushrooms, chopped
2 tsp pepper
2 tsp garlic powder (or 1 fresh clove)
1 tsp salt
Brown meat in a medium skillet, adding spices as it cooks. Once meat is cooked, add raw spinach, spiralized zucchini and diced tomatoes and bring to a simmer. Dinner is ready when zucchini is tender and spinach is wilted. Serve alongside a serving of rice or sweet potato for a complete meal.
